Dr. Santoro’s Quinoa Recipe

 

Salad Ingredients:

  • 1 cup of Quinoa (cooked)
  • 1 can Black Beans
  • 1 can Corn
  • 1 whole green of red bell pepper
  • 1 bundle of parsley (leaf deiced)
  • 1 bundle scallions diced
  • Sea Salt - to taste
  • Minced Garlic - to taste

Dressing Ingredients:

  • 1/2 cup Olive Oil
  • 1/4 cup White Wine Vinegar
  • 1 whole squeezed lemon 

 

Combine all of the salad ingredients in a bowl. Mix the dressing ingredients together and pour over the salad. Toss.  Enjoy!
