Dr. Santoro’s Quinoa Recipe
Salad Ingredients:
- 1 cup of Quinoa (cooked)
- 1 can Black Beans
- 1 can Corn
- 1 whole green of red bell pepper
- 1 bundle of parsley (leaf deiced)
- 1 bundle scallions diced
- Sea Salt - to taste
- Minced Garlic - to taste
Dressing Ingredients:
- 1/2 cup Olive Oil
- 1/4 cup White Wine Vinegar
- 1 whole squeezed lemon
Combine all of the salad ingredients in a bowl. Mix the dressing ingredients together and pour over the salad. Toss. Enjoy!
